Pork Fillet – Free-Range, Tender, and Versatile
Our Pork Fillet is one of the most delicate and versatile cuts from free-range, outdoor-bred pigs, akin to the filet of beef. Taken from the muscle that protects the internal organs rather than a hardworking movement muscle, this cut stays incredibly tender and juicy during cooking.
Typically 6–8 inches (15–20 cm) long, our pork fillets are perfect for quick, elegant meals or more elaborate recipes.
Cooking Instructions
Oven-Roasted Pork Fillet
- Preheat your oven to 180°C (fan 160°C / gas mark 4).
- Season the fillet with salt, pepper, and fresh herbs such as rosemary or thyme.
- Sear in a hot frying pan with a knob of Butter or olive oil for 2–3 minutes per side to lock in the juices.
- Transfer to the oven and roast for 15–20 minutes, or until the internal temperature reaches 63°C for medium-rare.
- Rest for 5–10 minutes before slicing to retain maximum juiciness.
Medallions / Quick Frying
- Cut into 2–3 cm thick medallions.
- Fry over medium-high heat for 2–3 minutes per side, resting for 2–3 minutes before serving.
- Perfect for Asian stir-fries, Vietnamese caramel pork, or simple pan-seared dishes.
