Unlike pale, intensively reared supermarket pork, our pork belly is richly marbled with layers of creamy fat and dark-pink lean meat – the key to unbeatable succulence, flavour, and crispy crackling.
Our pigs roam freely, socialise naturally, and mature slowly, developing fat and flavour in a way that cannot be rushed. The result is pork belly that truly stands apart – tender, juicy, and utterly delicious.
How to Cook Pork Belly
For the ultimate Sunday roast or dinner party centrepiece:
- Preparation: Score the rind with a sharp knife. Rub generously with olive oil, sea salt, and black pepper.
- Slow Roast: Place the pork belly on top of roughly chopped onions in a roasting tin. Add a mug of water, cider, or apple juice. Cover tightly with foil and cook low and slow at 130-140°C (120°C fan) for 3-4 hours, until meltingly tender.
- Crisp the Crackling: Remove the foil, raise the oven temperature to 200-220°C (180-200°C fan) and roast for a further 20-30 minutes until the rind is golden, bubbled, and perfectly crisp.
