We all love jerky.  But the last time you bought some at the store, did you just take a second to notice how much it cost–per pound?  Or is jerky one of those things we just close our eyes and enjoy?  I’m fine with that, I guess, up to a point.  But there’s a very deeply satisfying feeling I get when I make my own homemade venison, bear, turkey, or wild pig jerky, at home, in my own oven or dehydrator, without a lot of folderol and extra expensive gear I don’t use any other time of the year. Antelope jerky? Deer jerky? Burger jerky? Elk jerky? What wild game jerky recipes do you yearn for? Want some easy jerky recipes or perhaps you’re ‘as old as your teeth’ and want tender jerky recipes and have lots of venison burger in the freezer.  Homemade burger jerky is easy–easier yet with a $25 jerky gun.  

Now making homemade wild game jerky isn’t as fast as baking a batch of cookies, but it’s close.  Get a few good wild game jerky recipes you love earmarked in the book, and you can make them in your sleep–with meat that comes from your freezer, that you were going to have in there anyway, because you love to hunt.  Along the line here, it starts getting pretty darn cheap per pound to produce wild game jerky. And you can make it as spicy, as salty, as tender,  as sweet or smoky as you want.  Homemade wild game jerky can be sliced or it can be ground, for easier chewing.  FYI ground jerky is not only easier on our teeth, it’s easier to make: just how long does it take to grind 20 or 40 pounds of game?  A lot less time than it takes to slice–especially if you’re making sure each slice is the same thickness. Plus, ground jerky can use all those delicious bits and pieces that aren’t big enough for a steak, much less a roast.  You worked hard for that meat, and you want to use it all.  

Bird hunters will find ground jerky a great choice too.  Birds are oddly shaped.  Or at least not built for easy slicing–with no waste.  But if you bone out those drumsticks, thighs, wings and bits, you can make lots of delicious turkey, duck and goose jerky.  Bacon wild pig jerky is darned good, for instance.  Pheasant jerky, turkey jerky and wild pig jerky, are all wonderful.  (Ranch Jerky? So simple, just a dose of Ranch Dressing Mix) or Bacon or Breakfast Sausage jerky. More variety, more flavors, than you find in the store.  Wild game jerky in your pocket, on your next hunt? What could be better?

My friend Geoff says, Not smoky enough by half!  But that’s why homemade jerky is best. Whatever you can imagine, you can make.  Wondering what to make from the 80 pounds of boned out gamy venison from that trophy buck that’s lurking in the freezer? Or the rather bland young doe?   The bear that no one will eat but you?  (My friend John L shot a nice mule deer buck last fall, but it’s a bit gamy and no one else will eat it.  So he ground it and shaped it all into burgers and has been slowly eating it all year.  Counting the days.  All by himself.  Jerky is the cure.
